Salary: £ 36,000

Reporting To: Deputy Procurement Manager

Work Structure: on site, 5 days a week.

Main Purpose of the Position:

The Food and Beverage Manager will oversee all aspects of the food and beverage operations, ensuring the provision of high-quality meals that meet the dietary and cultural needs of our residents. This role requires strong leadership, excellent organisational skills, and a commitment to maintaining the highest standards of food safety and customer service.

Essential Duties and Responsibilities:

  • Oversee daily operations of the food and beverage department, ensuring efficient and effective service delivery.
  • Coordinate with internal and external caterers to ensure timely and accurate meal provision.
  • Develop and implement standard operating procedures (SOPs) for food and beverage services.
  • Collaborate with caterers to design menus that meet the nutritional, dietary, and cultural needs of residents.
  • Ensure the quality, taste, and presentation of all food and beverages served.
  • Conduct regular inspections and taste tests to maintain high standards.
  • Recruit, train, and supervise food and beverage staff, including chefs, kitchen assistants, and serving staff.
  • Schedule and manage staff shifts to ensure adequate coverage.
  • Foster a positive and collaborative work environment.
  • Manage the food and beverage budget, controlling costs and maximizing efficiency.
  • Oversee inventory management, including ordering, storage, and waste reduction.
  • Maintain accurate records of expenses, inventory, and revenues.
  • Ensure exceptional customer service, addressing any complaints or concerns promptly and effectively.
  • Gather feedback from residents to continually improve food and beverage offerings.
  • Organize and facilitate special dietary requests and meal accommodations.
  • Ensure compliance with all health, safety, and hygiene regulations.
  • Implement and monitor food safety practices and HACCP (Hazard Analysis Critical Control Point) standards.
  • Conduct regular training sessions on food safety and hygiene for staff.
  • Liaise with external caterers, suppliers, and community organizations to enhance food service operations.
  • Represent the hotel in community meetings and forums related to food and nutrition.

Requirements:

  • Education: Bachelor’s degree in Hospitality Management, Culinary Arts, or a related field preferred.
  • Experience: Minimum of 5 years of experience in food and beverage management, preferably in a hotel or institutional setting.
  • Computer literate with knowledge of all Microsoft Office products

Skills:

  • Proficiency in budgeting and financial management.
  • Exceptional customer service and communication skills.
  • Knowledge of food safety regulations and standards.

Job Description

Kippie Sports & Leisure Club is a private club located in Milltimber, Aberdeen. It offers its members social and sporting facilities. We are looking for someone who is looking for a new challenge and the chance to build and develop the Food & Beverage Operation as well as having the chance to put their own mark on the business.

This is a permanent position based at the Lodge working a five-day week / average 40 hours per week with alternating shift patterns, weekend work will be expected.

You will ensure that the food and service offered by the Lodge is of the highest standard and delivered within budget and where applicable events are properly costed & well managed. You will be expected to create a positive, supportive, and can-do culture amongst all the staff, and create an atmosphere. You will be an integral part of Kippie’s Management team.

KEY DUTIES / OBJECTIVES

· Ensure the quality of cleanliness, hygiene and safety within the Lodge meets member’s expectations, record any issues and ensure corrective action is promptly taken (communicate issues to Club Director/QHSE Manager)

· Responsible for the profit and loss of the Lodge Operation; schedule shifts and oversee the daily operations or delegate to F&B Supervisor. As such will require access to all relevant costs from finance.

· Develop, manage and report on actuals vs. annual budget for the Lodge operations; ensure that the best deals for all produce are obtained.

· Manage staff to deliver consistent high-quality service, identify any gaps and close in a timely manner.

· Develop, cost and manage events (both member and corporate) in conjunction with the Marketing & Events Manager and Head Chef, and that a range of event F&B packages are available by end January & communicated to events Management and admin for sales.

· Maintain, recruit and train (compulsory & development) staff in conjunction with the HR Manager, Head Chef to deliver quality service in the Lodge Operations, obtain the relevant F&B operating licenses and associated personal training.

· Complete annual appraisals for all front of house staff and Head Chef in conjunction with HR.

· Ensure compliance with all relevant F&B licensing requirements; obtain training for required compliance.

· Update and develop menu in conjunction with the Head Chef which will deliver the required margin on F&B; this should be varied through the year & cater for all tastes.

· Provide Duty Manager support for Kippie Operations as required.

· Laise with the Head Chef and update and design menus
