We are recruiting for a Senior Chef De Partie to work in our culinary programme for our new members club in a grade II listed townhouse coming to Mayfair in Autumn 2021.

Our Senior CDP will be responsible for delivering the smooth running of a section on a day-to-day basis to deliver a quality product and service to our members. You will be assisting the Head Chef and Sous Chef in creating menu items, recipes and developing dishes. You will be responsible for preparing, cooking and presenting high quality dishes and maintaining a clean work area and also you will be responsible to train your colleagues. You should uphold the highest standards and ensure the member experience is always in line with our members club standards.

WHAT YOU WILL DO

The key responsibilities for this role will include but are not limited to:

  • Assisting the head chef and sous chef in providing catering service to our members and also in covering for sous chef when on leave.
  • Assisting in maintaining an efficient ordering system in accordance with our members club policy.
  • Assisting the Culinary management team in creating a highly regarded kitchen environment which meets the Maison Estelle standards and expectations.
  • Producing of all items, with the correct recipe and procedure, correct quantity and of the best quality.
  • Delivering a fresh, high quality food offer for Maison Estelle.
  • Working and assist across all food sections in the kitchen.
  • Ensuring the highest possible standard of presentation cleanliness in all areas of the kitchen, both in the kitchen itself and back of house areas.
  • Maintaining a clean and orderly cooking station.
  • Controlling the wastage and of your section keeping costs down.
  • Ensuring storage of all food and provisions is done safely and in line with standards.
  • Allocating duties to chef de parties.

PERSONAL PROFILE

  • Proven experience working in the Kitchen departments in a luxury / lifestyle multi-outlet food and beverage operation.
  • Stays up to date with current food trends and best practices.
  • Must be able to work flexibly including evenings and weekends due to the operational hours of the club.
  • Excellent communication skills and comfortable talking to colleagues, senior management and coming front of house to talk to members.

What we are looking for:

We are currently recruiting for a Senior Chef de Partie who is driven and ambitious to join our amazing kitchen team.

Having a strong attention to detail and cooking skills, these are both essential to the role. Other factors such as understanding kitchen processes, for example: inventory, compliance, food health and safety/hygiene standards and audit points are pivotal to the role.

Having an understanding COSHH, HACCP, Natasha’s Law and the legal requirements behind allergen protocols and procedures.

Main Responsibilities:

To prepare and produce food to the highest standard in a prompt and timely manner while following the specifications given by Senior Kitchen team and to supervise and control the work of the Commis Chefs.

Within this role you must have previous experience working in a kitchen environment, having a strong attention to detail, teamwork, and kitchen processes such following the compliance of food health and safety/hygiene standards and that these are always maintained.

  • To keep his/her section always tidy and clean.
  • To adhere strictly to the food hygiene regulation.
  • To adhere strictly to the Health and Safety regulations.
  • To ensure that the kitchen is kept tidy, fresh and properly stocked as required.
  • To fill in any position required by Head Chef/Sous Chef.
  • To check, prepare and supervise preparation of food, to the highest standards set by the company.
  • To motivate and train junior staff members while on the job.
  • To report any fault of equipment immediately to Sous Chef or Head Chef.
  • To ensure complete confidentiality relating to all matters concerning the Company.
  • To lead by example in relation to displaying the four key behaviours of the Customer Service model.
