We are a fresh food pub in Bowdon on the Cheshire/Manchester border just out past Altrincham looking for a senior chef to join our small but talented team.

We are looking for a strong sous chef to work alongside our head chef and current sous chef who is able to work across all sections of the kitchen with input on menu development and financial accountability across the kitchen.

Reporting to the head chef we expect you to be at the top of your game in terms of cooking and kitchen management. We have our next food offering opening later in the year so we’re hoping to find our next head chef within the current crop of chefs within the business alongside the candidate we hire for this position that will be ready to step into the head chef role in the next site early next year.

What we ask of you

– Don’t be a dick! We have no time for prima donnas or big ego’s, you must work well with others and the large open kitchen means no foul language or pan slinging. We also place great emphasis on the relationship between front of house and back of house staff, there is no ‘us and them’ mentality and we would like to keep it that way. The perks of an open kitchen are pretty decent though in that the regulars will buy you a pint a lot more often!

– We want to push out a small fresh food menu which will change regularly as well as daily blackboard dishes. The core menu with consist of a couple of snacks/appetisers, 6-8 small plate starters, 6-8 mains and 4 desserts. We have all the mod cons in the kitchen including two rationale ovens, thermomix, pacojet and large charcoal/wood open fire grill.

– We want to be known for having the best chefs, cooking imaginative dishes to at least rosette standard, using local suppliers and day boats where possible, foraged ingredients when you can and the opportunity to develop a small kitchen garden to grow our own produce. As a senior chef you will have daily involvement in this process and be challenged to create new dishes, source ingredients and work with the owners to produce a menu that exudes passion, sustainability and creativity.

– We will be actively searching for accolades including rosettes, good pub guide, good food guide and top 50 gastropubs so we want you on board with this from day one.

– Cooking times Monday – Saturday 12noon – 8pm last booking, Sunday 12.30pm – 7pm last booking. So no late night finishes, we are in a village environment so the bulk of our customers are tucked up in bed by 10pm during the week and only marginally later at weekends.

– Must be a team player and able to communicate and work together to create new dishes and menus regularly and be someone who thrives on the creative side of the job, offering new and exciting dishes to our guests on a regular basis.

– We have a small function suite with a maximum of 100 covers attached to the pub offering a selection of buffet menus, canapés and occasionally sit down dinners to our guests so this will have to be managed alongside the daily running of the a la carte menu. Again creative input on these menus to keep them fresh and exciting will be appreciated.
