The role

As a Pastry Chef de Partie, you’ll be responsible for delivering a high level of food to all our guests. Whether working in our newly refurbished and extended state of the art main kitchen or spacious banqueting kitchen, you’ll be responsible for:

  • The preparation, presentation and service of dishes for a variety of events or services including afternoon tea.
  • Gaining extensive knowledge of our menus and food offerings.
  • Assisting the management team in the control of all food supplies and purchases coming in and out of the kitchen, using date labelling processes.
  • Adhere to all food safety and health and safety guidelines.

About you

As a Pastry Chef de Partie, you’ll work alongside an award-winning Head Pastry Chef and brigade and be part of a growing team who pride themselves in delivering a first-class product every time. We ask that you take pride in your work and have a willingness to learn. You’ll have a real passion for food, and excellent attention to detail to provide consistent standards.

You will also:

  • Demonstrate previous experience at Commis Chef or Demi Chef De Partie level.
  • Have a passion for all things pastry.
  • Demonstrate previous experience in a hotel or restaurant environment.
  • Be self-aware and able to evaluate your own work.

We are looking for a passionate pastry professional to join our Kitchen Team here at Moor Hall Hotel and Spa, Sutton Coldfield.

About the job

Based at the Mandarin Oriental Mayfair, London within the Culinary Department in London, the Pastry Chef de Partie is responsible to ensure a smooth running of the pastry section during service. The Pastry Chef de Partie reports to the Head Pastry Chef.


As Pastry Chef de Partie, you will responsible for the following duties:

  • Prepare daily and weekly production list and market list in timely manner.
  • Lead the section with sense of urgency and ownership
  • Receiving and storing goods with the company food safety standard, stock rotation, FIFO and correct date labelling

As Pastry Chef de Partie, we expect from you:

  • Execute all food items with standard recipe and plating guide as devised by the Pastry Culinary Team
  • Ensures that station opening and closing procedures are carried out to standard.
  • Report all deficiencies in kitchen equipment functionality Sous Chef or Head Chef in a timely fashion.
